Miner\u2019s Lettuce<\/h2>\n<p>Miner\u2019s lettuce (<em>Claytonia perfoliata<\/em>) is often dismissed as a weed and ignored as an herb garden option, and that\u2019s such a shame, because it rocks.<\/p>\n<p>Some \u201cweeds\u201d have a merely tolerable flavor \u2013 certainly not something that you\u2019d cultivate and build recipes around. But not miner\u2019s lettuce.<\/p>\n<p>It\u2019s worth intentionally growing like you would <strong><a href=\"https:\/\/gardenerspath.com\/plants\/herbs\/homegrown-basil\/\">basil<\/a><\/strong> or <strong><a href=\"https:\/\/gardenerspath.com\/plants\/vegetables\/grow-spinach\/\">spinach<\/a><\/strong>.<\/p>\n<p>The leaves have a thick, crisp texture that crunches pleasantly between the teeth. The leaves and flowers taste like bean sprouts and spinach had a marvelous baby.<\/p>\n<p>Beyond the flavor, it\u2019s also an easy herb to grow. It\u2019s super cold hardy and you\u2019ll find it growing up through snow and ice.
