One Pan Chickpea Shakshuka for Busy Nights

Shakshuka is one of those meals that feels cozy and impressive without asking much of you, which is exactly why I turn to it when I’m tired of cooking but still want something nourishing and satisfying. This version leans into all the shortcuts that make weeknights easier. Frozen diced potatoes, canned chickpeas and a jar of marinara create a rich, smoky tomato base in minutes. Add a few eggs and a sprinkle of feta and you’ve got a comforting skillet dinner that’s substantial enough to stand on its own and ready in about 20 minutes.

I’ve been cooking and developing recipes for a long time, but even I hit a wall this past year and felt completely burnt out. That’s why I’m so passionate about sharing recipes like this one. I like using a roasted garlic marinara because the flavor blends well with the smoked paprika and cumin. If your sauce leans more basil heavy, that’s fine too, just use what you already have.

  • Use a large skillet. A 10–12 inch skillet gives the eggs room to cook evenly without crowding.
  • Adjust the spice level easily. Add crushed red pepper flakes for heat or reduce smoked paprika for a milder flavor.
  • Finish with fresh parsley right before serving. It brightens the whole dish and balances the smoky spices.
  • Don’t stress if the yolks cook more than you hoped. The dish is still delicious, hearty and flavorful even with firmer yolks.

  • 16 oz frozen diced potatoes
  • 1 tablespoon avocado oil
  • 2 tablespoons tomato paste
  • 1 can chickpeasdrained and well rinsed
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 24 oz marinara sauce of choice
  • 6 eggs
  • ¼ cup feta cheese
  • 2 tablespoons flat leaf parsley
  • ½ teaspoon crushed red pepper flakesoptional
  • Preheat a large (10-12 inch) skillet over medium heat for 2 minutes.

  • Spray with avocado oil and add frozen potatoes. Cook for 4-5 minutes, adding about 1 tablespoon of oil to the potatoes.

  • Add tomato paste and cook for 1 minute.

  • Add chickpeas, paprika, cumin, garlic powder and salt. Stir well.

  • Add the jar of marinara, stir well. Let the marinara come up to a simmer.

  • Make wells for the eggs using the back of a spoon.

  • Crack eggs into wells. Put the lid on and cook for 5-7 minutes until eggs are cooked to your liking.

  • Crumble feta over eggs and sprinkle with chopped parsley. Add optional crushed red pepper flakes as well.

    ¼ cup feta cheese, 2 tablespoons flat leaf parsley, ½ teaspoon crushed red pepper flakes

  • Serve with crusty bread or salad for a simple meal.

  • Grease the skillet for the potatoes. Lightly spray or drizzle avocado oil before adding the potatoes, then add a little more as they cook. This prevents sticking without creating hot-oil splatters.
  • Rinse the chickpeas well. Draining and rinsing removes the liquid they’re stored in, which can cause digestive discomfort and helps the chickpeas sauté better.
  • Let the marinara come to a simmer. Add the eggs only once the sauce is bubbling gently. This helps the whites set quickly while keeping the yolks soft.
  • If you are worried about cracking eggs right into the pan, crack them into a small ramekin first so it’s easier to catch shells. 
  • Make small wells for the eggs. Use the back of a spoon to create spaces for each egg so they stay in place and cook evenly. This helps the eggs have somewhere to go and they stay in one place. 
  • Cover the skillet tightly. A tight-fitting lid helps steam the eggs so the whites cook through without overcooking the yolks.
  • Check the eggs early. Every stove is different. Start checking around 5 minutes so you can stop cooking as soon as the whites turn opaque.
  • Add feta right after cooking. Sprinkle some feta on the hot skillet so it softens slightly and blends into the sauce.

If you’re out of chickpeas, use your favorite white beans instead. Cannellini beans are my top pick because they hold their shape well and blend nicely with the smoky tomato sauce.

Do I have to cook the eggs in the sauce?

No. If you prefer scrambled or poached eggs cooked your favorite way, you can absolutely make them separately and spoon them on top of the shakshuka. It’s a great option if you’re particular about how you like your eggs or don’t want to worry about timing.

Can I make this spicier?

Yes. Add crushed red pepper flakes, a pinch of cayenne or use a spicy marinara to give the dish more heat. This recipe is flexible, so you can adjust the spice level to what you enjoy.

Can I make this dairy free?

Absolutely. Just skip the feta or use dairy free feta. The shakshuka is still hearty, smoky and flavorful without it.

Is this good for meal prep?

The potatoes and chickpeas in the sauce reheat really well. When I tested leftovers, I reheated the base and cooked fresh eggs on the stove to serve on top, and it was wonderful. I haven’t tested reheating the eggs that cook in the sauce, so I can’t speak to how well they hold up. questions

With Christmas just around the corner our family is in full holiday mode. That means hosting, baking, and making tasty treats like this peppermint date bark. It’s naturally sweetened with dates and is full of nutrients. 

This dessert looks pretty on the plate for guests, but it shines just as bright for an everyday dessert for the family. I’ll make a double batch and freeze the extra for a quick and easy way to have dessert on hand. 

Peppermint Date Bark Ingredients

You’ve probably heard of chocolate bark before. It usually involves waxy tasting, super sweet chocolate covered in fruit, nuts, or candy. Bark candy has gotten an upgrade in recent years and there are lots of great recipes. However, they can still rely on a lot of sugar. 

Mighty Medjool Dates

This version though relies on Medjool dates for the bulk of the sweetness. These dates are full of fiber and have modest amounts of iron, calcium, potassium, and magnesium. They’re also a good source of vitamin B6 and copper. Medjool dates are rich in antioxidants to fight free radical damage. 

Researchers have studied their carotenoid and phenolic acid antioxidants and discovered benefits when it comes to heart health. A 2021 study concluded eating whole dates helped improve heart health markers. This included better cholesterol levels, and lower oxidative stress and inflammation. 

Cacao vs Chocolate Chips

Instead of regular chocolate chips, I used two kinds of cacao wafers for this peppermint date bark. Cacao wafers are pure chocolate without the added milk or sugar. They have calcium, iron, antioxidants, and other nutrients that are great for overall health.

Cacao butter wafers are made from the pure fatty part of the cacao bean. They’re similar to white chocolate chips, but again without the added milk and sugar. I added a little coconut oil to the cacao butter wafers and cacao wafers when melting for a more spreadable texture.

 The addition makes this peppermint bark a great vegan, allergen-friendly option for anyone who wants to avoid dairy. 

Nut Butter (and Substitutes)

I love the smooth, creamy flavor of almond butter in these. You can also make date bark with peanut butter. Need a nut free option? To make date bark without peanut butter or other nut butters, substitute sunflower butter. And instead of the chopped almonds, try pumpkin seeds or hemp seeds for some crunch. 

While the original date bark recipes tasted more like a Snickers bar, these have a mint flavor. I added some crushed candy canes to the top for some festive sweetness. Most peppermint candy has ingredients I prefer to avoid, but I really like these ones from Yum Earth for an occasional treat. They’re naturally flavored with real mint, use organic sugar, and are colored with fruits and veggies. 

Peppermint date bark is high in calories, but it’s also high in healthy fats and nutrition so it’s filling. Here’s how to make it!

Peppermint Date Bark Recipe

  • Fold a piece of parchment paper in half and lay it open on a flat surface. Slice each pitted date in half lengthwise, but don’t cut all the way through, the halves should remain attached. Arrange the dates on one half of the parchment in four rows of three.

  • Lightly wet the parchment paper. Fold the parchment over the dates and gently roll with a rolling pin to flatten them evenly.

  • Spread almond butter evenly over the flattened dates. Sprinkle the chopped almonds over the almond butter layer.

  • Fill a pot or the bottom of the double boiler with a few inches of water and bring to a simmer. Add the chocolate chips and 1 teaspoon of coconut oil to the top pot or bowl.

  • Pour the melted chocolate over the almond butter and date layer and spread evenly.

  • Place candy canes or peppermint candies in a small bag and crush with a rolling pin or heavy object. Sprinkle the crushed peppermint evenly over the chocolate.

  • Melt the cacao butter wafers in the top of the double boiler or glass bowl with 1/2 teaspoon coconut oil. Drizzle or pipe the cacao butter over thh top of the bark.

  • Sprinkle flaky sea salt over the top.

  • Lift the bark using the parchment onto a baking sheet and chill in the fridge or freezer until fully set, about 20–30 minutes.

  • Slice or break into pieces and enjoy!

The Food and Drug Administration intends to get tougher on vaccine approvals, as top officials raised concerns about the risk of COVID vaccines for children.

Speaking on Fox News Saturday morning, FDA Commissioner Marty Makary said the agency would no longer “rubber-stamp new products that don’t work,” claiming it made a “mockery of science.”

Makary’s comments came the day after FDA’s top vaccine regulator, Dr. Vinay Prasad, told his team the agency would change its annual flu vaccine framework, update vaccine labels to be “honest,” and make other changes to how it reviews vaccines, according to contents of an internal email reviewed by NPR and reported on first by a PBS News Hour correspondent and later by The Washington Post.

Prasad wrote that the FDA would also no longer authorize vaccines for pregnant women without stricter requirements. And for pneumonia vaccines, manufacturers will have to prove they reduce disease rather than show they generate antibodies. He also raised questions about giving multiple vaccines at the same time, which is standard practice.

The changes could make it much more difficult and expensive for vaccines to get approved, further limiting the availability of vaccines, which are considered among the safest and most effective tools for protecting people against infectious diseases.

While all vaccines carry some risks, most public health experts argue the current process for vetting vaccines before marketing has long assured that the benefits of vaccines outweigh their risks. Studies required after vaccines are approved and surveillance systems, including the Vaccine Adverse Event Reporting System (VAERS), also flag potential safety issues once vaccines are in use.

FDA says an analysis links COVID shots to some deaths

Makary said on Fox News that 10 children had died from the COVID shot during the Biden administration, but did not offer specifics about how the FDA came to that conclusion. Millions of children have received the vaccine. 

Officials with the Department of Health and Human Services and Food and Drug Administration didn’t immediately respond to requests for comment on the COVID analysis and changes to vaccine review standards.

According to the FDA email from Prasad, he told the agency’s biostatistics and pharmacovigilance team to analyze 96 reported deaths from 2021 to 2024, and they determined 10 children died “after and because of” the COVID vaccine. But Prasad said the true number was likely higher.

Dr. Paul Offit, who directs the Vaccine Education Center at the Children’s Hospital of Philadelphia, said in a text message that Prasad has not shared the evidence that these vaccines killed 10 children.

“Because he doesn’t provide any evidence, he is asking us to trust him on an important issue,” Offit said. “All this will do is scare people unnecessarily. At the very least, he should provide all the evidence he has so that experts in the field can review it and decide whether he has enough data to prove his point.”

Dr. Jesse Goodman, a professor at Georgetown University who held Prasad’s job at FDA from 2003 until 2009, said in an email that the FDA’s Center for Biologics Evaluation and Research, which oversees vaccine approval, has been “recognized globally as a gold standard regulator.” Goodman defended “immunologic endpoints like antibody levels” for the accelerated approval of pneumonia and influenza vaccines. He said science supports their use and they are confirmed with studies after approval: “These approaches have helped provide children and adults with timely access to safe and effective vaccines, saving many lives.”

Michael Osterholm, an epidemiologist at the University of Minnesota, reviewed the email from Prasad and challenged his statement that “COVID-19 was never highly lethal for children.” Osterholm also questioned the FDA’s latest analysis of adverse event reports attributing the 10 deaths to COVID vaccines.

“Prasad’s email is filled with factual mistakes and misrepresents both the severity of COVID in children (1597 deaths in 2020-2022) and how the US responded to the first signals of possible vaccine-associated pediatric deaths in May 2021,” Osterholm wrote in an email to NPR.

“While Prasad’s email notes 10 such deaths, these cases have never been presented for review by the medical and public health communities or published in the medical literature,” Osterholm continued. “Given the record of this Administration to misrepresent scientific data regarding vaccines, until these cases have been reviewed by an expert third party, like the National Academy of Science[s], we can not accept the fact they are vaccine-associated deaths.”

Surveillance system collects vaccines reports

The FDA makes public data from the VAERS surveillance system co-sponsored by the Centers for Disease Control and Prevention. But FDA cautions, “it is important to note that for any reported event, no cause and effect relationship has been established.” In his email, Prasad wrote that “with case reports, causality is typically assessed on a subjective scale. In this scale ranging from certain to unlikely — certain, possible/likely, and probable are broadly considered as related to the product.”

Makary said on Fox News that when the COVID shot was first rolled out, it was “amazing” for people at high risk of coming down with severe disease, but things have changed.

“Back in 2020, we saw a reduction in the severity of illness and lives saved, but now recommending that a 6-year-old girl get another 70 million COVID shots – one each year for the rest of her life – is not based on science. And so we’re not going to just rubber stamp approvals without seeing some scientific evidence.”

The claim is the latest move by Trump administration health officials questioning the safety and effectiveness of vaccines and how the government has regulated them. Health Secretary Robert F. Kennedy Jr. has long questioned vaccines.

The FDA restricted eligibility for the updated COVID vaccines in August after announcing the agency planned to require more evidence about the shots’ safety and effectiveness going forward.

CDC committee will meet to review vaccine policies

The FDA email on vaccine policy comes just before the CDC convenes a crucial two-day meeting of that agency’s influential Advisory Committee on Immunization Practices on Dec. 4-5. The committee is in the process of conducting a major review of how children are inoculated against dangerous infectious diseases such as measles, mumps, rubella, polio and hepatitis B.

Many public health experts are concerned the committee will upend the childhood vaccination schedule. It could move to delay the timing of some inoculations, space out vaccinations and call for the reformulation of some vaccines. Taken together, the moves could result in fewer children getting protected and the resurgence of once-vanquished diseases.

Asked about Makary and Prasad’s claims that the COVID vaccine caused deaths among 10 children, Moderna, whose COVID vaccine is approved for children as young as 6 months old, pointed to a statement it made in September. The company says that multiple published, peer-reviewed studies from a variety of sources show its shot is safe and that it is “not aware of any deaths in the last year or pertinent new information from prior years.”

Moderna says it monitors its vaccine’s safety along with regulators in more than 90 countries. “With more than one billion doses distributed globally, these systems — including in national health systems across Europe, the United Kingdom, Canada, Australia, and the U.S. — have not reported any new or undisclosed safety concerns in children or in pregnant women.”

Pfizer did not immediately respond to requests for comment.

The aluminum plant, Pilea cadierei, is an evergreen herbaceous perennial that grows outdoors in part shade in USDA Hardiness Zones 11 and 12, and indoors in bright indirect sunlight in all locations.

It has a shrub-like, clumping growth habit and is appreciated for having texturally rich foliage that is green with silver markings.

P. cadierei is one of approximately 600 types of non-stinging Pilea species in the Urticaceae, or nettle family that contains stinging nettle and clearweed.

The leaves have serrated margins, and are a cross between elliptical and ovate in shape, as some are pointed, and others are more rounded.

The leaves feel waxy, and the stems are fleshy, like those of a begonia or succulent species.

The flowers are nondescript with a greenish-white color. They grow in cymes, which are flat-topped inflorescences, or clusters.

In their natural habitat, blooms appear in spring and summer, but they are rarely seen on houseplants.

With a manageable mature height of nine to 12 inches and a spread of six to nine inches, this little cutie is well suited to indoor gardening, especially in small spaces where it can shine as a standalone showpiece.

P. cadierei is native to China and Vietnam, where it grows as a ground cover over the jungle floor, thriving in shade and dappled sunlight with an abundance of heat and humidity.

P. cadierei likely made its way west as one of a host of tropical specimens destined for study, cultivation, and introduction to the burgeoning ornamental plant market of the early 20th century, when imported palms graced Victorian parlors.

And although it is a relatively short-lived species that is unlikely to last more than five years, it’s so easy to propagate from stem cuttings that you can enjoy it well into the future.

How to Grow

Keep your plant in a room with temperatures between 60 and 75°F, and provide bright indirect light.

Direct sunlight, especially through a windowpane, can scorch foliage and should be avoided.

Use an organically rich, loamy potting medium that is light and airy, moisture retentive, and well-draining. A pH of between 5.0 and 6.0 is ideal.

Aluminum plants thrive in soil that is kept evenly moist, but not waterlogged.

Water the plant before the soil in the pot dries out. Take care to water the soil, not the leaves, as wet leaves are prone to diseases and rotting.

If your home is especially dry, you may want to increase the relative humidity for your aluminum plant.

You can do this by setting the plant on a tray of pebbles with water or by clustering a group of houseplants together.

At planting time and each spring, feed with a well-balanced liquid fertilizer per package instructions.

Continue to feed monthly during the growing season to stimulate the production of healthy foliage.

In autumn, growth slows down, and a period of dormancy begins. Reduce watering and suspend fertilizing until the following spring.

Aluminum Plant

In addition to full-size plants, there is a dwarf variety. P. cadierei ‘Minima’, with an especially petite height of only eight to 10 inches. It has the same rich green and silver leaf markings, and cultural requirements.

Maintenance

This is a moderate amount of maintenance involved in caring for your aluminum plant during the growing season.

In addition, this is a fast-growing species that requires regular pruning during the growing season to maintain a compact form.

The removal of dead and damaged leaves as well as leggy stems optimizes visual appeal.

Always sanitize pruners in a 10 percent bleach solution (one part bleach to nine parts water) before and after use.

Make cuts just above a pair of leaves to stimulate upward foliar growth.

If you are going to use the pruned stems as cuttings to propagate new plants, recut them just below a pair of leaves to stimulate root growth below the leaf node.

To encourage bushier growth, you can wash your hands and use your thumb and index fingernails to periodically pinch off the top inch or two of fresh spring and summer growth.

Propagation

To start your own watermelon pilea, you’ll need to take a stem cutting from an existing plant or purchase a new one from a nursery that you can transplant to your own pot as desired.

First, let’s talk about taking cuttings and rooting them in either water or soil. Then we’ll move on to nursery pots.

From Stem Cuttings

The best time to take cuttings is during the growing season in spring or summer.

To take a cutting from a stem, start at the growing tip and measure down about three inches.

Use clean scissors to cut cleanly across the stem about an eighth of an inch below a pair of leaves.

Snip off the lowest leaves so you’re left with a length of bare stem at least two inches long, with the top leaves intact.

Choose a four- to six-ounce container and sanitize it with a 10 percent bleach solution (one part bleach to nine parts water), then thoroughly rinse and dry it.

Place the stem in the container and fill it with two inches of water.

Set the container in a location with bright indirect sunlight and a temperature between 60 and 75°F.

Change the water every few days to keep it fresh.

You’ll see fragile white roots sprouting from the bottom of the stem in a few weeks.

In another week or so, it’s time to transplant the cutting to potting soil.

Choose an attractive, well-draining container that can accommodate bushy dimensions of nine to 12 inches tall and six to nine inches wide.

Fill the pot three quarters full with your choice of potting medium and make a one-inch-deep hole.

Gently insert the rooted stem into the hole and tamp the soil around it securely, then water well.

If you wish to start your cutting in soil, you can dip the cut end in rooting hormone powder, then set the cutting one inch deep in a starter pot filled three quarters full of potting medium.

Maintain even moisture. New growth is evidence of successful root formation. At this point you can pot it up into a larger container.

From a Nursery Pot

When you purchase a potted specimen, you may wish to repot it in a container of your choice.

Choose a container that will accommodate the mature dimensions of the plant, and ensure that it has drainage holes in the bottom.

Gently unpot the plant and loosen the soil and roots.

If they are tightly coiled, or root bound, you can snip the lowest roots to loosen them and flay them outward to encourage them to spread out.

Place the entire contents of the original pot in the new container. Set it so the plant is at the same depth in the new pot as it was in the old.

Fill in with organically rich potting soil as needed. Ideally, you should leave one inch of space from the rim of the pot to the soil surface to allow for watering without overflowing.

Tamp the soil down to secure the plant in the new pot, and water well.

Pests and Disease

With bright, indirect light, moderate watering, rejuvenating pruning, and monthly fertilization, your watermelon pilea will enjoy good health and be able to fend off many ailments.

However, houseplants in rooms that are too hot and dry may succumb to pests like aphids, mealybugs, or spider mites.

Caught early, a firm dousing with the kitchen sprayer followed by a treatment with organic insecticidal neem oil should do the trick.

Getting rid of these pests is a must, as they are carriers of plant diseases, and their sap-sucking can cause extensive foliar damage.

When a pest infestation can’t be controlled, as a last resort, you can cut all the stems to the crown and discard them in the trash.

With a nourishing dose of liquid houseplant fertilizer and regular watering, the stems may regrow.

The following diseases are common to P. cadierei:

  • Anthracnose (Colletotrichum spp.)
  • Myrothecium Leaf Spot (Myrothecium roridum)
  • Pythium Root Rot (Pythium spp.)
  • Rhizoctonia Aerial Blight (Rhizoctonia solani)
  • Xanthomonas Leaf Spot (Xanthomonas campestris)
  • Southern blight (Sclerotium rolfsii)

Most of these are caused by fungal pathogens or water molds (oomycetes). Symptoms can be hard to distinguish, and most spell disaster.

Only Pythium root rot and Rhizoctonia aerial blight may respond to fungicidal treatment.

The bottom line is this: When plants are too hot and dry, they may succumb to sap-sucking pests.

And when the foliage stays wet, it becomes a breeding ground for pathogens, most of which cause diseases that are are incurable.

It’s important to be proactive!

Avoid both under- and overwatering, and always water the soil, not the leaves, to prevent moisture buildup.
